Easy Cheesy Chicken Nacho Sheet Pan Recipe - 15 minute meal
Homemade Chips (or store-bought):
Cut corn tortillas into triangles
Lightly spray/brush with oil + sprinkle salt
Bake at 375°F for 10–12 min (or fry until golden + crisp)
Fajita Chicken Base (leftovers from last night):
Chicken breast/thigh
Red, yellow & green bell peppers
Red onion
Garlic, cumin, chili powder, salt, pepper
(Chop it all up for the nachos topping)
Nachos Assembly:
Spread chips on a baking sheet.
Top with chopped fajita chicken + veggies.
Add Monterey Jack + Colby Jack cheese.
Bake at 400°F for 8–10 min, until cheese melts.
Remove → top with jalapeños en escabeche.
Drizzle with crema + finish with cilantro.
