Easy Cheesy Chicken Nacho Sheet Pan Recipe - 15 minute meal


Homemade Chips (or store-bought):


  • Cut corn tortillas into triangles

  • Lightly spray/brush with oil + sprinkle salt

  • Bake at 375°F for 10–12 min (or fry until golden + crisp)



Fajita Chicken Base (leftovers from last night):


  • Chicken breast/thigh

  • Red, yellow & green bell peppers

  • Red onion

  • Garlic, cumin, chili powder, salt, pepper

    (Chop it all up for the nachos topping)



Nachos Assembly:


  1. Spread chips on a baking sheet.

  2. Top with chopped fajita chicken + veggies.

  3. Add Monterey Jack + Colby Jack cheese.

  4. Bake at 400°F for 8–10 min, until cheese melts.

  5. Remove → top with jalapeños en escabeche.

  6. Drizzle with crema + finish with cilantro.


🔥 Serve hot + messy.
