Chicken Noodle Soup for da Soul <3

la mejor chicken noodle fs.

2 tablespoons butter

2 yellow onions, chopped

4 celery stalks, chopped

2 large carrots, chopped

5 garlic cloves

12 cups chicken stock

1 whole chicken

4 bay leaves

Thyme, optional


Pasta noodles (I recommend elbow pasta or fideos)

Lime, optional

Tabasco, optional



In a large pot over medium heat melt your butter, add in onions, celery and carrots about 8 minutes until softened. Add in garlic, bay leaves, thyme (optional) and cook down for about 5 minutes until garlic is softened. Add your broth and bring to a boil. Add in your chicken and

bring to a boil once again, reduce heat and simmer for 30 minutes. Remove chicken from pot and add in your pasta noodles. While those cook, go ahead and shred your chicken and add it back into the pot. Bring to a boil, cover and turn heat off. Season to taste with salt and pepper and enjoy! :) I always finish off with lime and tabasco, even though I HIGHLY recommend this is completely optional!
