This super simple recipe for a quick and healthy everyday lunch or dinner is a 10/10.

You’ll need:
3 Alaskan Cod Filets
1 cup finely chopped pistachios
1/4 cup almond flour
3 teaspoons garlic, minced
Olive oil, drizzle
Salt + Pepper, to taste
How to make:
Preheat your oven to 350 F. In a medium size baking dish drizzle a good amount of olive oil. Season all of your Cod filets with salt and pepper and place on previously greased baking dish and add a coat of minced garlic, now top with pistachios and almond flour, making sure to cover the whole top part of your filets. Drizzle with olive oil before placing in the oven. Bake COVERED for 20 minutes, uncover and broil at 450 F for 3 minutes.
Now it’s ready to enjoy! You can pair with a mix of greens (which is my favorite way to go) or with rice/quinoa or veggies!
