Spice Up Your Mornings with Delicious Chili Oil Egg Toast

This is such a quick and easy recipe! 10/10

Makes 1 Prep time: 2 minutes Total cook time: 10 minutes


2 eggs

1 slice Sourdough bread

1/2 cup arugula

1/2 cup cherry tomatoes, sliced in half

1/4 cup greek yogurt

1 lemon, juice

1 tablespoon extra virgin olive oil

2 tablespoons Chili Oil, plus more for garnish

Salt + Pepper

How to make:

Toast your sourdough. In a medium skillet add some chili oil and crack both eggs over chili oil and let them cook covered for about 4 minutes on medium-low heat. (You can add a couple tablespoons of water, cover and cook for longer if you want your yolks to be cooked all the way through.)

Now spread a thin layer greek yogurt on your toasted sourdough and season with salt and pepper, top with your eggs and reserve. In a small bowl toss together arugula, tomato, lemon, olive oil and salt and use this to top your egg toast! Enjoys!
